What a microgreen is
Microgreens are young edible seedlings harvested after the cotyledons have opened and, depending on the crop, around the appearance of the first true leaves.
They are not the same as sprouts. Sprouts are typically germinated in very humid conditions and eaten with the seed and root. Microgreens are grown in light and harvested above the growing medium.
That distinction matters for flavor, handling, crop selection, and food-safety practices.
Why microgreens fit HMC

A basic home cycle
1. Choose seed — Use seed appropriate for edible microgreen production from a reputable supplier. Avoid treated seed unless specifically appropriate and disclosed.
2. Clean the system — Clean trays, tools, surfaces, and hands before seeding. Start with clean water and an appropriate medium.
3. Seed evenly — Density varies by species and seed size. Overcrowding increases competition, trapped moisture, and uneven growth.
4. Germinate — Manage moisture without creating stagnant, saturated conditions. Some crops use a covered or weighted germination period.
5. Add light and airflow — Light supports color and growth; airflow and moisture management reduce weak growth and disease pressure.
6. Harvest cleanly — Harvest above the medium with clean tools when the crop reaches the desired stage.
7. Cool and use — Handle gently, keep dry enough to avoid deterioration, refrigerate promptly, and use while quality is high.

A USDA-supported study measured vitamin and carotenoid concentrations in 25 microgreen varieties and found substantial variation among crops.
Some microgreens contained higher concentrations of selected nutrients than mature-plant reference values, but the result depends on the species, cultivar, growing conditions, harvest stage, analytical basis, and serving size.
HMC should publish crop-specific data with the tested amount and source—not turn every microgreen into the same universal nutrient claim.
Food-safety and crop-selection notes
- Do not grow tomato, potato, pepper, eggplant, or other nightshade seedlings as edible microgreens.
- Use clean equipment, suitable seed, potable water, moisture control, and good handling practices.
- Discard trays with unexplained odor, slime, extensive mold, or contamination.
- Microgreens are not sterile. People at higher risk of foodborne illness should discuss raw-produce choices with a qualified health professional.
Prepare it well
Microgreens are often treated as decoration. Use them as ingredients.
Add delicate greens after cooking when you want fresh aroma and texture.
Use peppery or mustard greens to cut through rich food.
Use pea shoots or sunflower greens when the green needs enough body to become part of the meal.
Taste the crop before adding it. Growing conditions and harvest age can change intensity.
Use it fully
- Plan meals before harvesting the whole tray.
- Harvest only what will be used when the crop allows staged cutting.
- Use stems and leaves together unless the texture is unsuitable.
- Record shelf life by crop and storage method.
- Compost failed or spent plant material only after edible use is exhausted and contamination concerns are considered.
